This kit provides a demonstration of the reaction between sucrose and sulfuric acid. In the demonstration sulfuric acid is poured on sucrose, producing a large amount of black foam, steam and smoke. The equation for the intense chemical reaction produced by this is C12H22O11(s) + H2SO4(aq) + 1/2 O2(g) ? 11C(s) + CO2(g) + 12H2O(g) + SO2(g). It represents what is essentially an attack by the acid on the sugar and the magnificent visual result of this complete dehydration process provides a powerful lesson for students.
