This demonstration shows students the formation of gels and colloids by using Ethanol trapped in a Calcium acetate solution matrix. A gel being a mixture of multiple components in which one provides a fairly stable structure and another fills the space between its molecules. In this particular exercise the Ethyl being trapped in the Calcium acetate solution matrix leaves it flammable while the matrix essentially dictates the rate of combustion.
